Emily says: “These are a great quick breakfast or an easy snack during the day. Skip the added chocolate, these are sweet enough on their own. I use dried cranberries and coconut flakes for my mix-ins.”

Farro Salad with Thinly Sliced Zucchini, Pine Nuts, and Lemon Zest

Lorelei says: “Pine nuts can be very expensive, feel free to swap your favorite nut instead—I love walnuts or cashews here.” You can also use another grain, such as barley, instead of farro.


Chicken & Summer Vegetable Tostadas

Cassie says: “This is a favorite weeknight meal for me and my family. Use whatever vegetables you have on hand, and you won’t miss the chicken if you leave it out. It makes great leftovers and the mixture is just as delicious without the tortillas.”
