Super Bowl Recipe: Smarter Spinach Artichoke Dip

The Super Bowl is as much about the snacks and the commercials as it is about football. While almost all foods are ok in moderation, many popular game day snacks like chicken wings, pizza and nachos can throw your healthy diet off track.

But there are ways to lighten up your favorites—spinach artichoke dip is a great place to start. You’ll score a touchdown with this crowd-pleaser on Sunday and your friends won’t even know it’s healthy!

Ingredients

12 oz. spinach (frozen, fresh or a combination), cooked down and drained

1 15-oz. can cannellini beans, rinsed and drained

2 tbsp. olive oil

1 ½ tbsp. minced garlic

1 tsp onion powder

¼ tsp ground pepper

¼ tsp salt

1 14-oz. can quartered artichoke hearts, drained and chopped

½ cup 2% Greek yogurt

½ cup grated Parmesan cheese (plus more if topping with cheese)

2 tsp hot sauce, to taste

Directions

  1. Preheat oven to 375. Cook spinach according to package directions, or if using fresh spinach, cook over medium heat in 1 tablespoon of olive oil until wilted.
  2. Meanwhile, add beans, olive oil and spices to a food processor or blender and blend until smooth. Add to a bowl with drained spinach.
  3. Add remaining ingredients to the bowl and mix until combined. Add mixture to an oven-safe dish, sprinkle with cheese if desired, and bake for 20-30 minutes or until dip is bubbling and cheese is melted. Serve warm with crudités.
